Butter is back. Beef tallow is everywhere. Saturated fat has been reclaimed by wellness culture, and seed oils have somehow become the villain. But did we actually get butter wrong?

In Part 2 of my Fat Wars series, I’m digging into the complicated science of saturated fat, cholesterol and heart disease. We’re talking LDL, ApoB, those supposedly harmless “big fluffy” LDL particles, and why raising HDL doesn’t necessarily cancel out an increase in LDL.
We’ll also unpack some of the controversial studies used to defend saturated fat, why butter, coconut oil, beef tallow and cheese don’t necessarily behave the same way, and the MOST important question in this entire debate: if you eat less butter, what are you replacing it with?

Because replacing butter with refined carbs is very different from replacing it with whole grains, nuts, olive oil, canola oil or other unsaturated fats.

Butter deserved a correction. But did it deserve a coronation?
Let’s look at the evidence.
